Akasake, or akazake ("red sake"), is a traditional, brownish-colored sweet sake from Japan's Kumamoto region, and distinct from modern, clear sakes. Its reddish-brown color comes from the traditional "Amomo-chi" brewing method, where wood ash is added to the mash instead of using heat pasteurization.
